Beans Curry with Coconut

This curry with beans & coconut is a typical South Indian dish. It is full of natural goodness of the green beans & fresh coconut with very little oil & spices. It’s a wonderfully light on the stomach.
A wonderful accompaniment to rice with most sambhars & kozambus………
Ingredients
- beans - 250 gms, stringed & finely chopped
- grated fresh coconut - 2 tbsp
- green chillies - 2, chopped into 1 inch bits
- haldi / turmeric powder - a pinch
- salt to taste - about 1/2 tsp
- oil - 2 tsp
- mustard seeds - 1/2 tsp
- a few curry leaves
Method
- Heat the oil . Add the mustard & allow it to splutter.
- Add the chillies & then the beans, salt & turmeric. Stir well & cook for a minute on high flame.
- Sprinkle 3-4 tbsp of water, reduce the flame & cook uncovered on medium flame until the beans is done. Stir every now & then for even cooking of the beans.
- When the beans is done , sprinkle with coconut & curry leaves, give it a good stir & serve immediately.
