Corn & Coriander Bake

This baked dish tastes best when the corn kernels are sweet & nice. I like a lot of chopped coriander & chilli flakes in this dish. This makes the dish a little more spicier & flavourful than a normal continental dish. Do check it out.
Ingredients
For the Base Bread Layer
- bread - 4 slices
- butter - 2 tbsp
- salt - about 1/4 tsp
- chilli flakes - 1/4 - 1/2 tsp
- grated cheese - 2 tbsp
For the Sauce
- tinned corn or corn nibblets - 1 cup
- milk - 2 1/2 cups
- butter, softened - 2 tbsp
- flour (maida ) - 2 tbsp
- salt to taste - about 1/2 tsp
- pepper - 1/4 tsp
- grated cheese - 2 tbsp
- chopped coriander - 3-4 tbsp
For the Topping
- grated cheese - 2 tbsp
- melted butter - 2tbsp
Method
- For the base layer, break the bread into pieces. Grind in a mixer to get fresh bread crumbs.
- Melt 2 tbsp of butter in a pan.Add the fresh crumbs, salt & chilli flakes. Saute for 5 minutes. ( I like them just a bit crunchy ).
- Spread the sauteed crumbs in a greased ovenproof dish. Sprinkle 2 tbsp cheese over it & keep aside.
- For the sauce, heat the butter. Add the flour. Cook on low heat for 1 minute.
- Add the milk, stirring continuously. Add the salt & pepper & stir until it comes to a boil.
- The sauce will become thick & custard like. Now add the cheese & mix well.
- Mix in the corn & coriander & remove from fire.
- Pour the mixture over the bread crumbs in the dish.
- Sprinkle the cheese & pour some melted butter on it.
- Bake in a preheated oven at 180 degrees C for about 25 - 30 minutes or until the top is golden brown.
- Serve immediately .
