Gobi Paratha

Ingredients
- atta/ whole wheat flour - 1 cup
- a pinch of salt
- oil to pan fry the parathas
For the Filling
- cauliflower - 1 small
- kasuri methi - 2 tbsp or so
- salt to taste
- chilli powder - 1/2 tsp
- turmeric powder - 1/4 tsp
- oil - 1 1/2 tbsp
Method
- Cut the cauliflower very, very finely.
- Heat the oil in the kadhai. Add the cauliflower, salt & turmeric powder & cook covered on low heat until the vegetable is nearly done.
- Now add the kasuri methi & chilli powder, turn up the flame & cook for a few minutes until the filling is completely dry.
- Set aside to cool.
- Make a dough with the flour, salt & water as you would for rotis. (fairly stiff dough) Allow to rest for about 1/2 an hour.
- Take lemon sized ball of the dough, roll it out a bit. Place a tbsp of filling in the center . Pull up the sides & pinch it together to close. Flatten & roll it out again into a circle.
- Heat a tawa on medium flame & place the paratha on it. After the first side gets done a bit, turn it over & cook for a couple of minutes.
- Dribble some oil all around the paratha & allow to cook for a min or two. Turn the paratha over again & dribble some more oil & cook again.
- Serve hot with curds & pickle.
