This is a really quick & easy meal to make when you come back tired from work. Moreover, it’s wonderfully spicy & tasty…Check it out !!!
Kadhi
Ingredients
- …
- 2 medium - onions sliced
- 2 cups - curds
- 3 tsp - besan (chickpea flour )
- 2 cups - water
- 1 tsp - ginger -garlic paste
- or
- a small piece of ginger & 2-3 pods of garlic, chopped (garlic optional )
- 1/2 to 1 tsp - chilli powder
- 1/4 tsp - haldi
- 1/4 tsp - mustard
- 1/4 tsp - jeera
- 1/8 tsp - methi seeds ( its ok if you don’t have it )
- 1/8 tsp - dhania seeds ( its ok if you don’t have it )
- 2Tbsp - chopped fresh dhania
- 3 Tbsp - ghee or cooking oil
- Salt to taste
- 3 large onions diced into large pieces
- 2 tomatoes chopped into large pieces ( 8 pcs…..cut into 1/2 then again each into 1/4 )
- 2 capsicumcs diced into big pieces
- 1/2 tsp chilli powder
- 2- 3 tsp oil
- salt to taste
Method
- Mix the besan & curds so that there are no lumps. Add the water & salt & keep aside.
- Heat 2 Tbsp oil in the kadai. Add the mustard , let it splutter, then add the jerera, methi & dhania. Stir for a few seconds .
- Add the onions & fry for a few minutes until they become transparent. Add the ginger-garlic paste& fry for a few mins. Add the haldi & chilli powder & stir for a few seconds ( the chilli powder should not become burnt, it should just give a nice aroma ) .
- Keep the flame on medium . Pour in the besan mixture . Stir constantly for a few minutes until the mixture thickens & coats the back of the spoon.
- Top with fresh chopped dhania & serve with hot rice.
- Stir Fried Veggies
- Heat oil. Keep the flame on high.
- Add the onions. Stir & fry for a 2-3 minutes.
- Add the capsicums & continue stirring for another2-3 minutes
- Add the tomatoes. Add the salt & chilli powder & keep stirring for another 3-4 mins.
- Check for seasoning & serve immedietly with the Kadhi & Chawal.
Notes / Variations
You could change the propotions of veggies as you like. Also , you could add diced paneer along with the tomatoes & proceed in the same manner . Wonderfully flexi dish to make !
