Lemon Rice is one of those popular Kalanda Saadam that all Tamil households make every once in a while.When we were kids, it was a favourite dish at all family picnics, to be eaten with crushed appalams & vadaams. Its lemony taste is terribly refreshing. I have put down a very simple version of the dish that can be turned out in a jiffy. Do check it out !!!
Ingredients
- cooked rice - 2 cups ( should not be sticky )
- oil - 2-3 tsp
- green chillies - 2, chopped
- dry red chilli - 1, broken into bits
- ginger - 1/4 inch pieces, chopped or grated
- (if you don’t have it, you can add1/4 tsp ginger paste )
- mustard seeds - 1/4 tsp
- split urad dal - 1/4 tsp
- chana dal - 1/4 tsp
- turmeric powder - a pinch
- salt to taste ( 1/4 - 1/2 tsp)
- juice of 1- 1 1/2 lemon
- a few curry leaves
- some chopped coriander for topping
Method
- Heat the oil in a kadhai. Add the mustard seeds & let it splutter.Now add the urad, chana dal & red chilli bits. Stir for a few seconds.
- Now add the green chillies, ginger& curry leaves, stir for a minute & add the turmeric powder. Immediately remove from fire.
- Add the salt & lemon juice to the tadka & mix well.
- Now add the cooked rice( each grain should be separate) to the tadka mixture & mix gently. Adjust the seasoning.
- Top with chopped coriander & serve.
