Potato- Onion Curry -the Tamil Way

Boiled potato -onion curry……..the Tamil way.
Simple & easy to make.
Ingredients
- potatoes - 4 medium sized
- onion - 1 large, finely sliced, green chilli - 1, chopped
- turmeric - 1/4 tsp
- chilli powder - 1/2 powder
- asafoetida ( hing ) - a pinch
- salt to taste
- oil - 2 tbsp
- mustard - 1/2 tsp
- urad dal - 1/2 tsp
- chopped coriander - 1 tbsp
Method
- Boil the potatoes in the pressure cooker.. Cut the potatoes into 2 & place in the cooker with a little water & give 3 whistles. Open the cooker after the pressure releases. Cool slightly & remove the peel. Chop roughly & keep aside.
- Heat the oil in the kadhai, add the mustard & let them splutter. Now add the urad dal & the hing & stir for a minute. Immediately add the onions & green chilli & stir them gently until onions start browning at the edges. Immediately add the potatoes & the seasonings, turmeric & salt. Cook for 8- 10 minutes, on slow flame, stirring them once in a while.
- Add the chilli powder & fry for another 4-5 minutes .
- Remove from fire &,top with chopped coriander & serve hot.
