I have been for long an ardent fan of this antipasti dish named Funghi alla Trapanese ( grilled mushroom starter ) which we order every time we go to the Little Italy Ristorante. I even know the serial number of the dish in the menu card off hand..A10…………….
Its a simple dish but freshly made & served hot , its wonderful !
Roasted mushrooms with garlic, lemon, parsley and olive oil served with warm farmer’s bread.
For Italians, food has been an integral part of their heritage and culture since the 4th century BC. For them cooking is an art in which they take a lot of pride. It’s a way of life, a life style through which their friends and families are bonded indelibly together.
Italian food is simple and yet very vibrant. The main characteristic of Italian cooking is its healthy balance, the excellent basic ingredients being simply cooked and retaining their original goodness and freshness. Simple and yet with such a variety of flavors and rich inventiveness in preparation, that even the most demanding gourmet is delighted. Traditional Italian meals have five courses and may last one or two hours or even longer. A full meal usually consists of an appetizer, first course and a second course with a side dish. Their main meal is at midday and are generally big such as a pasta or antipasto (appetizer) followed by the main course.
Ingredients
- garlic cloves 6
- salt to taste
- lemon juice 2 tbsp
- extra virgin olive oil 6 tbsp
- fresh button mushrooms 500 gms
- fresh parsley 4 tsp, chopped ( i used dried parseley )
- The method os awfully simple…..
- Crush the garlic with a pinch of salt, using pestle & mortar. Squeeze the lemon juice & mix with the garlic & the oil.
- Wash & thoroughly dry the mushrooms. Make a cross on top of each mushroom & then pour the dressing on top.
- Bake on the oven at 180 degrees, for about 10 - 15 minutes, until golden. Sprinkle fresh parsley over the top & serve……
- Serve with warm farmer’s bread.
