I have followed a basic bread recipe from Chef Sanjeev Kapoor’s book for this recipe. Since I have tried this recipe before, I have very confidently added all kinds of Indian
spices & stuff, like, onions, ginger, green chillies, coriander leaves etc to the basic recipe.
The end result , to my delight was terrific.
Do try it out.
Bread making, you will find, is not really difficult or any such thing. It takes a bit of time. That’s for sure. But you will find that eating a home baked bread is worth the effort !!!
Ingredients
- flour( maida) - 1 1/4 cup
- whole wheat flour( atta ) - 3/4 cup
- fresh yeast - 6 gms ( that’s about 3/4 tbsp)
- powdered sugar - 1 tbsp
- salt - 3/4 tsp
- water - 3/4 cup
- spring onions - 1 chopped with the greens
- ginger - 1/2 inch, chopped finely
- garlic - 1-2, peeled & chopped
- fresh coriander leaves - 2 tbsp,chopped
- green chillies - 2-3, chopped finely
- freshly ground pepper - 1/4 tsp
- melted butter- 1- 1 1/2 tbsp
Method
- Combine the yeast & sugar with about 1/8 cup of lukewarm water, stir & set aside for 10 - 15 minutes until frothy.
- sift the flours & salt in a large bowl. Make a well in the center & pour the yeast mixture into it. Add approximately 3/4 cup of water & mix into a rough dough.
- Transfer to a floured surface & knead well until smooth& elastic.( at least 15 minutes.) Return to the bowl & cover with a damp cloth & set aside for about 2 hours until double in size.
- Knock back the dough.Add the onion, ginger, garlic, coriander, pepper & green chillies & knead well.
- Divide the dough into 4 equal parts. Roll each into a cylinder. Twist 2 cylinders to form a spiral & place on a greased baking tray. Do the same with the other 2. Cover with damp cloth & set aside until double.
- Preheat the oven to 200 degrees centigrade.
- Place the baking tray in the oven & bake for about 45 minutes until golden brown & soft to touch. Remove from oven & brush with melted butter. Transfer to the wire rack & cool. Cut & serve.
