Here’s my indianised version of the good old TOMATO SOUP !!!
From Scratch !!

Ingredients
- ..
- Tomatoes - 1kg ( choose nice red ones if possible )
- flour - 1/2 tsp
- butter- 2 Tbsp ( you can use oil if you are counting calories )
- Onion - 1 medium, very finely chopped
- sugar - 1 1/2 - 2 tsp
- salt & pepper to taste
For topping..
- Paneer 100- 150 gms, grated
- coriander - 2 Tbsp, chopped
Method
- Put a large pan on the stove. put the tomatoes in & pour just enough water to more or less cover it.
- Boil for a few minutes, maybe 6-7 minutes .
- Remove the tomatoes from the water & keep the water aside.
- After it is cool enough to handle, peel them & then grind in the mixer for a couple of minutes. Pour through a sieve to remove the peel & seeds. Keep aside the strained mixture.
- Heat the butter in a fresh pan, add the onions & saute for a couple of minutes. Add the flour & stir for a minute . Do not let the flour brown.
- Immediately pour the tomato mixture into the pan, Stirring continuously to avoid lumps. Add some of the water kept aside to adjust the consistency.
- Add the sugar( the Indian tomatoes are very sour & hence the need for sugar to balance the taste ), salt & pepper.
- Boil for 4 - 5 minutes.
- The soup is now ready to be served.
- Pour into a bowl & top with grated paneer & coriander.

Notes / Variations
You can add grated cheese instead of paneer for the garnish.
